Marinated Cheese

1 8oz block cheddar cheese
1 8oz block cream cheese, chilled
1 8oz block Monterey Jack cheese
1/2 cup olive oil
1/2 cup white wine vinegar
2oz jar chopped pimento, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onion
3 garlice cloves, minced
1 teaspoons sugar
1/4 teaspoons dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper

Combine all ingredients, except the cheese, in a jar; cover tightly, shake well.

Cut cheese in half lengthwise. Then cut each half crosswise into 1/4 inch thick slices.

Arrange the cheese alternately in a shallow dish. Pour marinade over the cheese.

Cover and chill for 6-8 hours. Serve with your favorite grain cracker.
